Make a decadent Mocha souffle....Try my simple recipe!

Ingredients:
4 tablespoons of bitter chocolate
8 tablespoons water
6 egg whites
100g castor sugar
1 tablespoon finely ground coffee
Extra castor sugar and butter to prepare souffle dishes
Cocoa powder for dusting
Method:
Pre heat oven to 200 C
Spoon cocoa powder into saucepan and add water until combined. Whisking all the time bring to the boil, stir in ground coffee and simmer for a minute until it thickens a little. Set aside to cool.
Prepare the individual souffle dishes by lightly buttering them then coating them with castor sugar, tipping out the excess.
Whisk egg whites adding sugar gradually until mix is thick and glossy.
In a separate bowl, fold a little of the egg white mix into approx 1 tablespoon of the cocoa mixture. When combined gently fold in the balance of the cocoa mix into the egg whites mixture.
Place souffle dishes on a baking tray and fill to the brim. Bake for 15 minutes or until souffle rises 4-5 cm above the rim.
Remove from the oven, dust with cocoa powder and icing sugar, serve immediately
